Recipe #1. Cream of asparagus soup

You will need:

  • 300 g potatoes;
  • 800 ml vegetable broth;
  • 150 ml cream (10-20%);
  • 2 Art. l. olive oil;
  • 800 g green asparagus;
  • salt (to taste).

Cooking:

1. peel the potatoes and cut into small cubes, rinse the asparagus thoroughly. The lowest and roughest part of the stem must be removed. The topmost part of the asparagus should be cut off and set aside. Cut the rest of the stem into circles;
2. Boil water in a saucepan and add the tops of the asparagus. Boil for a few minutes and remove the asparagus from the water;
3. potatoes need to be stewed a little, a little later add asparagus to it. Stew vegetables for 7-8 minutes;
4. Pour the vegetables with broth, salt to taste. Simmer soup over medium heat for 20 minutes;
5. Beat the weight with a blender;
6. Add cream and heat soup;
7. Serve the soup garnished with boiled asparagus tops.

Recipe #2. Cod on vegetable cushion

You will need:

  • 700 g cod fillet;
  • 1-2 tomatoes;
  • 1 bell pepper;
  • Salt (to taste).

Cooking:

1. Cod cut into large pieces, wash, dry, salt;
2. Cut the pepper into thin strips and cut the tomatoes into slices;
3. Put a layer of bell pepper on the foil, and on it – layer of tomatoes;
4. Put a piece of fish on a vegetable pillow;
5. Wrap each portion of fish with vegetables in foil;
6. Put the dish in preheated to 180 °; oven for 30-40 minutes.

Recipe #3. Cottage cheese casserole with berries

You will need:

  • 300 g low-fat cottage cheese;
  • 200 g fresh or frozen sweet berries;
  • 1 egg;
  • 2 Art. l. semolina;
  • 0.5 tsp soda;
  • 1 tbsp sour cream.

Cooking:

1. Mix cottage cheese, semolina, egg and soda well. Add berries;
2. Mix the berries very carefully with the curd mass, especially if they are fresh. You can add a little vanilla sugar;
3. Put the curd dough in a mold, grease the top with sour cream;
4. Place the casserole in the oven, preheated to 180-200°; for 30 min.
