When a coconut is just beginning to ripen, underneath the shell is a white, fleshy layer called copra. This layer can reach an average of 12 mm. Inside the coconut is the endosperm – coconut juice. At the middle stage of ripening, transparent coconut juice turns into coconut milk – emulsion. This is due to the production of copra oil. The emulsion thickens further as the coconut matures and after 8-9 months it is completely solidified.
It is hardened coconut milk and copra that is used to make oil. How it happens: the coconut is shelled, the inside is crushed and dried, after which the raw material is transferred for pressing in order to process and squeeze out only the most valuable – coconut oil.
If the hot pressing process is used to produce oil, after processing 1 kg of copra, approximately 300 grams of oil is obtained. A more gentle technology for obtaining coconut oil, after which most of the useful components are preserved in the raw material, – it is cold pressed.
