Salad: the beginning of the evening
Appetizers and salads are always put on the table first. And the New Year is clearly no exception. There are many vegan salads, but on the New Year's table there should be a dish familiar to everyone from childhood.
Of course, we are talking about Olivier salad. We got you some simple recipes for this salad, designed specifically for vegans. Believe me, even an avid meat-eater will like such a salad. Here are the recipes:
1.With mushrooms
For this Olivier variant you will need:
- 3 large potatoes;
- 2 medium carrots;
- 2 pickles;
- can of green peas;
- 300-400 grams of pickled mushrooms;
- 1 small onion;
- lean mayonnaise.
2. With vegan sausage and tofu
This option is for those who want to get as close to the original as possible without changing their principles. For it you will need:
- boiled potatoes;
- boiled carrots;
- vegetarian sausage;
- can of green peas;

- soft tofu;

3. With seitan and avocado

2. Cauliflower Puree

- 700 grams of soy meat;
- 1 bulb;
- 3 tomatoes;
- olive oil;

First you need to fry the meat with onions in a pan and transfer to a small saucepan. After that, fry the tomatoes a little (so that they give juice) and send them to the pan with the meat. Then you need to bring the whole mixture to full readiness over low heat.
Chop
It turns out that the chop can be made from soy meat. Here are the required products:
- soy meat;
- breadcrumbs;
- vegetable oil;
- spices.
In order to cook it, you just need to take a piece of meat, beat it and roll it in breadcrumbs. After that, fry in a pan.
Cutlets with mushrooms and buckwheat
Another version of the "meat" vegan dish with no meat at all. For these cutlets you need to take:
- 300-500 grams of mushrooms;
- 1 onion;
- 150-250 grams of boiled buckwheat;
- breadcrumbs;
- soy mayonnaise;
- spices.
You need to finely chop the mushrooms and onion and fry them in a pan. After that, mix them with buckwheat boiled in advance and season everything with mayonnaise. Then, cutlets can be molded from the resulting mass and, having rolled them in breadcrumbs, fry in a pan.
