To avoid a number of unpleasant symptoms, in this case it is worth following a gluten-free diet that excludes the consumption of products containing this vegetable protein.

How does a gluten-free diet work

Rye, wheat and barley are 80% gluten. When this protein moves through the small intestine, its particles can damage the villi that are on the surface of its mucous membrane. Villi  promote the movement of food through the intestines and its absorption. By eliminating foods containing gluten from the diet, it is possible to strengthen the villi and normalize the functioning of the gastrointestinal tract.

Allowed Foods on a Gluten-Free Diet

If you are gluten intolerant, you can consume:

  • fresh eggs;
  • vegetables and fruits;
  • fresh meat, poultry and fish (without breading and marinade);
  • beans, nuts, beans and seeds (not processed);
  • practically all dairy products, with the exception of yogurt and fermented baked milk with additives.

Gluten-free cereals and starchy foods. These include:

  • potato and corn starch;
  • flour from underground shoots and rhizomes of arrowroot  and corn flour, rice flour, oat and almond flour (labeled “gluten-free”), soy, buckwheat and bean flour;
  • buckwheat, soy, millet, rice, sorghum, tapioca, teff, oatmeal (labeled “gluten-free”), flaxseed, quinoa and quinoa flour.

Prohibited foods on a gluten-free diet

If you are gluten intolerant, you should avoid all foods that have been prepared with wheat, rye, barley or oats:

  • pasta, cereals;
  • buns, pizza, pancakes, pancakes, cakes, pastries, crackers, cookies, muffins;
  • all types of dough, bran, breaded dishes.

With a gluten-free diet, it is better to completely abandon the consumption of processed foods – sausages, cutlets, frankfurters, as they may contain gluten additives, the same situation with semi-finished soy products. You can decide to use semi-finished products only if the packaging indicates that the product does not contain gluten.

Gluten can also be found in products that seem to have nothing to do with this protein, but you should be especially careful and carefully read the ingredients when buying the following products:

  • mayonnaise, sauces (including soy);
  • crab sticks, semi-cooked rice, chips, bouillon cubes;
  • candies, breakfast cereals, croutons, ice cream;
  • French fries, deli meats;
  • medicines.

By following a gluten-free diet, it is possible to minimize the effects of intoxication and maintain health. Unfortunately, there is currently no cure for gluten intolerance. The only way out in such a situation would be to exclude products containing this vegetable protein from the diet.
