Minestrone Soup

You will need:

  • half a zucchini;
  • 100 g fresh peas;
  • a quarter of a medium head of cabbage;
  • one medium carrot;
  • 2 garlic cloves;
  • 3 medium potatoes;
  • a few stalks of green onions;
  • greens;
  • 3 liters of water;
  • olive oil;
  • salt.

Cooking:

  1. Pour a couple of tablespoons of olive oil into the bottom of a large saucepan and fry finely chopped garlic and herbs for up to 5 minutes.
  2. Pour water into a saucepan, salt and bring to a boil. Add diced potatoes and carrots to boiling water, cook for 20 minutes.
  3. Add zucchini, cabbage and peas, cook for 15 more minutes.
  4. Serve sprinkled with chopped herbs.

Nut Cake

You will need:

  • 50 g wholemeal flour;
  • 60 g oatmeal;
  • 150 g baked pumpkin;
  • a teaspoon of honey;
  • half of an orange;
  • 100 g cottage cheese;
  • 30 g walnuts;
  • 60 ml water;
  • vanillin and cinnamon on the tip of a knife;
  • replace sugar (to taste).

Cooking shortcakes:

  1. Mix oatmeal and walnuts in a blender (until fine crumbs).
  2. Add cinnamon, vanilla and flour to the mixture, mix well. Heat water a little and add honey to it, mix until completely dissolved. Pour the resulting liquid into the dough mixture, knead the mixture until a dough forms.
  3. Roll out the dough thinly, cut out circles or other shapes. Preheat the oven to 180 degrees, bake the cakes for 10 minutes.

Preparing the cream: mix pumpkin, cottage cheese and juice of half a lemon in a blender. You can add orange zest for flavor. A sugar substitute can be added to the cream if it is not sweet enough.

Smear each cake with cream – it can be 2 shortcakes with two layers, 3 shortcakes and so on. Decorate the dessert with half a walnut.
