• one medium pumpkin;

• small potatoes –1 piece;

• leeks;

• a pinch each of salt, pepper, marjoram;

• 750 ml water;

• chicken broth (can be made from cubes);

• a tablespoon of olive oil;

How to cook:

1. Peel potatoes and pumpkins, cut into small cubes. Cut the onion into rings. Put all this in a frying pan and fry in oil for about five minutes.

2. Transfer the resulting mixture to a saucepan and fill with water, add salt and pepper, add spices. Add bouillon cubes. If you're making chicken stock soup, you don't need them.

3. Bring to a boil and simmer for 20 minutes over low heat. Cover with lid during process.

4. Remove soup from heat and puree in blender until smooth. At the same stage, add finely chopped cheese.

5. If the soup is too thick, you can add a little boiled water.

The soup can be served by sprinkling it with herbs and cutting the cheese into cubes. Cream soup pairs very well with whole grain bread.<

• half a kilo of fresh mushrooms;

• two tomatoes;

• four potatoes;

• two onions;

• butter – 4 tablespoons;

• carrot;

• salt, herbs and sour cream – to taste.


How to make soup:
1. First, wash and clean the mushrooms well, cut them into slices, put them in cold salted water and boil for 20 minutes.

2. After 20 minutes, add potatoes, previously diced, to the mushrooms. Boil for 15 minutes.

3. Cut carrots and onions into cubes, and tomatoes – semirings. Fry everything separately in butter and add to the soup.

4. Cook until done – it's about 15 minutes.

Soup is ready! Before serving, sprinkle it with herbs, you can season with sour cream –
optional.
